Jenova isn't Sephiroth's mother. Jenova's genes were implanted into Sephiroth. His mother is Lucrecia.

Jenova was possibly never female to begin with, being a magical cosmic horror akin to John Carpenters The Thing. It could have merely mimicked or taken host of a female Ancient, which lead Shinra scientists upon it's discovery into thinking Jenova actually was an Ancient when that couldn't be any farther from the truth.
