She did appear. Not nearly as often and even less so in the manga, but she does show up in Z. Don't know about GT since I never really watched that, though.

Launch shows up twice in Z that I remember. Once when Goku is fighting... either Vegeta or Frieza, I forget, and he thinks about all of his friends and what'll happen to them if he loses, and again at the very end during the montage of all the people of Earth giving energy to the Spirit Bomb that Goku uses to kill Kid Buu.
