Honestly, I completely understand why this happens( along with multiple other things that happen in the anime) but it does tend to get tiring after so long. Makes me wonder what the anime would be like if they had went with their original plan to let Ash catch Mewtwo in the movie.

The issue with this scenario actually is this: Pikachu simply has a lot more combat experience than most of his enemies. And by most I mean pretty much everyone.
He's been to so many places, seen so much and fought more than any other Pokemon in Ash's arsenal. It's not a matter of levels, or type compatibility or anything like that. It's a matter of experience. He's simply more experienced, and that is a huge advantage in battle. You know what to do, how to avoid and when/where to hit.
But apparently, he still loses to starters like that? It's annoying, to say the least.

Has anyone here actually seen that Surskit in action? Why the fuck is everyone shouting that a Pikachu should be god by now while simultaneously treating this thing like trash? That is the meanest fucking Surskit I've ever seen and it belongs to Viola. Seriously, it's like Pikachu in that it's incredibly powerful even though it shouldn't be.

It also depends on the strategy each trainer puts out. No 2 pokemon or trainers are the same in the series, and the conditions always affect who has the better chances at winning. I mean you can be all attack and tanking, but who plays that way anymore? Ash/Pikachu need updates.

Of course Ass lost. He's not Red, who obviously improves as he moves along. Its to keep kids watching the show, since if Ash won every battle he was in, thanks to a ridiculously powerful pikachu, it would be very dull and predicable show.
