Yeah Sheik is a "man" by identity only, but that's only in Ocarina of Time where Zelda uses magic to alter her physical form; darker skin, eye color, muscle build. Any other depiction of Sheik is significantly more feminine. Sheik is an idea who's "gender" is relevant to scenario of the game. Because of this, Sheik can be referred to as male or female.
