Well, I like to imagine what we see is simply mid-transformation back to her true form.

Perhaps she purchased a glamour or transformation spell from an anonymous source to pursue a man who happened to catch her fancy, but was unsure as to whether he would see her if she retained her monster form.

After a time of gaining his trust, and perhaps his heart, she takes him out to the seashore under the moonlight to witness her return to her original state, as seen here.

As to what follows after, who knows?
