I don't see what Sorey has to do with this. Edna's hundreds of years old, yes, but Zavied is even older by several hundred or possibly even thousands more years. Edna's older than any human, sure, but she's still much, MUCH younger than the guy she is normally paired with.

Those two have a story behind.
Edna knew Zaveid from when he still traveled with her brother, and later he often came to the Rayfalke, to check on both her brother and Edna.
Besides, Edna is over a millennium old (1033 according to the last festival), and that's around Lailah's age. She's little, because her powers manifested when she was very young. (Seraphims are until they reach their full powers)
