Considering ho aimed at children the show is, I personally wouldn't mind her staying this way, and saving any "evil" for the movies, which usually have a more serious tone to them anyway, But that's just me, everyone else seems to want her to go batshit insane in the Anime, rather than just letting the Anime have a nicer one.....

Well, considering how Best Wishes glossed over the whole moral ambiguity of Team Plasma and their notions of Pokémon ownership in favor of portraying them as stereotypically evil right from the start (thereby gutting everything that made their whole dynamic interesting), I'd be surprised if they actually go all in with psycho Lusamine in Sun & Moon.

They'll probably go for the whole misguided, but well-intentioned parent route and save the evil stuff for when Nihilego comes onto the scene.

Best Wishes ended up like that because they went for the B2W2 portrayal of Team Plasma. The 2010 earthquake messed up their original plans, so it wasn't probably going to be like that at first.

Besides, they kept Lysandre's character intact for XYZ, so I wouldn't be surprised if Lusamine ends up being totally crazy like in the games. People just like to pretend this anime is much more childish than it actually is.

Eh, for the most part, the characters in the games are similar to the way they were in the games. Besides, it wasn't actually entirely evident that Lusamine was as crazy as she is until the Nihilego showed up for the first time, given that she wanted to appear to be ambiguous at first, with the scene that showed her collection of frozen Pokemon driving it home. And even then, they usually tend to follow the plot of the games pretty closely, so I wouldn't be surprised to see the Aether Foundation turn out to be villainous like the originally were. And there does seem to be some conflict between Lillie and Lusamine, anyways, which seems to me to be foreshadowing her true nature.

I think it's great we're seeing more of the loving side of her, that was almost entirely absent from the games. Besides, you can still see here that there is some friction going on. Let's just wait until the Ultra Beast stuff properly kicks off.
