From what I recall reading, there're 2 reasons:
1. it's the whole humiliation thing, being fucked by an ugly fat bastard produces rage which in turn produces adrenaline, and thus makes you horny.
2. Escapism, there're many fat guys who wish they'd fuck such hot girls but IRL (be it due hygiene, poor social skills, small dicks, etc.) they're not able to. And seeing hot girls being fucked by hot guys it's not appealing for them.
Boichi, the author of Sun-Ken Rock learnt about this, in one interview stated that one of his editors back when he did hentai, he was told that readers don't want handsome guys fucking cute/sexy girls, they want average/fat guys doing it, so they feel better with themselves.
