Maybe I'm overthinking this, but I prefer to examine this question on a slightly deeper level.
Like how good a fit of a romantic partner she is to you. How compatible is she is with you, Her willingness to stay with you, If she can manage her personality flaws well enough, etc. etc.
For example, I would've say Ilulu but.....
-Why did she choose to be my waifu exactly? Is it because she knows I'm obsessed with her?
-How exactly does her dragon form work? Her fire powers? Are we deleting it entirely because we're talking about reinventing her as a real life person?
-Is she hell bent on destroying the human world, or has she already been tamed into behaving like a normal girl?
-How do her proportions translate? Is she realistic thicc, or over-the-top levels of THICC? Cuz if it's the latter, then she'd probably look like a huge tittied pre-teen....
-Her human form is canonically 16 years old. Doesn't stop her from being sexually attractive, but I don't want to be called a pedo....
I'd probably go with a safe choice like Asuna from Blue Archive. She's a normal human girl with big tits, and she's very submissive, obedient, and loyal to her man. She'd make a perfect wife..... but she's also 17....

I'm going to overthink this aswell. Malon from Ocarina of Time, it seems like the only "realistic" choice for me. She's a very pleasant and hardworking young woman, she's beautiful, nice simple lifestyle, wonderful singing voice, she has huge...tracks of land, and she might feasably talk to me. It sounds like a simple life with easy to understand work and a beautiful wife who can get things done. What's not to like? Oh, and her dad seems like a really nice humble guy.

This one's hard, there so many...
...but I guess I'll just write the first one that popped into my head after reading this question, because my brain had fucking surprised even myself with this one. It wasn't one from one of the big franchises we usually discuss, but one from an older ecchi manga: the main girl, Emiru from Nozoki Ana.
One, she is exactly my type, and two, I feel that with somebody like her you could be 100% sincere, without any masks. That is almost impossibly rare.
