But in the modern day, I think the majority of girls not in the porn or film industry shave their pubic hair. So it puzzles me why film stars intentionally grow their body hair.

Well keep in mind this is mostly an American trope, but from what I can tell smackmybitchup is right: Realism that went into the "Coconut effect".
That said;
1.) porn stars have a bigger imperative to be waxed to avoid pubic lice.
