Its bitter flavor is considered an "acquired taste" to most Westerners and is strongly associated in Japan with Okinawan cuisine and with Okinawan longevity. It is also known as bitter gourd, bitter squash, or balsam-pear in English, plus many other local names. Goya from Okinawan and karela from Sanskrit are also used by English-language speakers.
