It didn't die. In fact, it's fate other than it going off to mate was left completely unknown. There's nothing to stop Butterfree from returning, and the 'dying after mating' was a mistranslation.

Of course, it's highly likely that Butterfree will never appear again.

Yeah seeing as his Pidgeot lives in Viridian Forest(which is very close to his hometown) and is never seen again, Seeing Butterfree would be downright never happen.
