Well to answer the question properly, I'll have to take my pervert side off first.

Ok.

All Sekirei are not human. Meaning instead of a 'He' or 'She' it's more appropriate to call them an 'It'.

But when they find their Ashikabi the bond they share also feels the same as love/lust/sexual attraction. The body thus changes to that of the 'opposite' sex if the Ashikabi is of the same 'gender'.

Hope that clears everything. Now where did I put my pervert side....?

That would be true, but since Uzume is still female since her ashikabi is the same gender as her and Mutsu is also male like his ashikabi and neither of these sekirei have shown any changes in their physical bodies.

Homura himself has stated that he had a special physical condition unlike the rest of the sekirei, just like Akitsu the scrap# has a special mental condition that makes her stronger than the rest yet unable to be winged. (control over elements is obviously more of a mental ability than physical ability).
