she was a princess that had the power to reset time (sort of) and she would keep sending knights to their doom only to make to ones that survive into demons. The Demon Lord was a knight that fell in love with her and decided to remove the power to reset everything (her wings). Its been a while since I read it but that should be right.

Emm... i wouldn't call it 100% "right" but long story short, yeah she is the true "evil" in the story while the demon lord is the victim.
She is the "sword of Odin", making the surviving knight (one) into the next "Demon Lord" (not a generic demon), etc.
