The anime is far superior to the movie as it actually has time to develop the plot and characters.

No, it's not necessary to watch Fate/Zero to get the general story. You'd only need to watch it to get some of the more subtle references made to it.

Unlimited Blade Works is an adaptation of the second route (of 3) from the Visual Novel Fate/Stay Night. The movie was a lousy adaptation that tried to cram the entire plot into barely two hours, it cut out A LOT of stuff. Like oh say...the entire character development of pretty much everyone? seriously it removes so much to try and squish an entire route into a single movie that it's not funny. The TV Series wasn't much better (I will forever hate that everyone just associates Fate/Stay Night with the original TV series because that was a crappy adaptation, and medicore on it's own merits).
You don't need to see Fate/Zero since Fate/Zero is a light novel series that was written a few years after FSN and thus doesn't expect you to know anything from it. Personally as much as I'm enjoying ufotable's adaptation, I'd still recommend people read the Visual Novel since it's the most complete experience, the original Fate anime was bad and squished in content from other routes, ufotable's UBW is great but still only just covers UBW, there's plans for a Heaven Feel Movie('s?) but how well those will adapt the final route I dunno.
