Because, apparently, he loses his Mystic transformation because he doesn't train, and can no longer sustain the transformation. That's what I've heard anyway.

Akira Toriyama in one of his newer interviews, for both the two new movies, new series, and new edits he put in for the older Manga, explained that Gohan is -always- in Mystic form. He's also explained in Dragonball Z Resurrection of F, that Gohan figures out he's not limited to just mystic, but can also go Super Saiyan while in Mystic for an even stronger boost, and this is something he only figured out later/After Majin Buu. On the Dragonball Wiki, they have inserts from the released interviews.
