I know it's fiction and it looks bad ass, but let's not break simple laws of physics. A handbag turning into a machine gun or shotgun would have worked, but a gatling gun in her size? Come on.

Also, her weapon is overpowered. Why not massproduce it and give it to every soldier and hunter in the world? No more Grimm.

Likely that each character and their weapon have a bond with their personal sigil that allows them to operate in their unique way.
Most obvious example is Pyrra being able to do the Captain America with her shield. The other reason being is that the user and creator are the same person.

Most probably because it is not versatile. A gatling gun (even one like this) has some disadvantages. The most important one being that it eats through ammo like a fat kid through a cookie store, and actually reloading takes a while, or a big ammo clip the size of a car wheel.
It is also meant to just mow down, which I imagine to be impractical when you need pinpoint accuracy. Remember where the birds (nevermores) she shot down fell? Right into the city. Some bullets also most probably went right into public property. As needed as their help was, I imagine that there are better ways to deal with big enemies rather than let them crash down into buildings and whatnot.
Still a badass woman though.

Hunters and huntresses design there own weapons. Coco made that weapon for her. It wouldnt be as effective if Ruby used it. I speculate too that they continue to improve there weapons overtime and since Coco is an older student has had more time to calibrate and improve upon her weapon.
