In all honesty.....Sans would lose, as much as i love the guy. Even when you ignore the fact that Omega Flowey is pretty much a demigod that can manipulate the game function itself and only beatable through the aid of the 6 Souls, Sans is considered the "weakest" monster.
Sans is only a powerful foe to the player only because he know he is weak, and thus exploiting everything he can to his advantage, such as dodging, no INV frame, Karma, stalling his turn...ect...and he only need to dodge a single knife swing from a child.

KINGROCKET, you do have a point, though I would say Sans could win in a fight disregarding Omega Flowey's game manipulation. In a fair fight, Sans would win because he actually follows the rules of combat, while Omega Flowey simply cheats. Also, Sans actually dodges multiple attacks if you have a weapon such as the notebook or gun equipped, so it's not just a single attack in that regard. Also, this "child" manages to cut Undyne (before turning into Undyne the Undying) in half, and she's wearing armor.

Also, this is cannon... Flowey has had immense trouble beating Sans himself. After fighting Agore several times and beating Omega Flowey as well, Flowey will mention about Papyrus and then his "garbage brother" Sans, who's given Flowey more than his fair share of resets. Much like how the player dies from Sans in a Genocide Route several times over.

And this is just a speculation, but I assume Sans is actually well versed in killing. In the Pacifist Route at MTT Hotel when you hang out with him, Sans states that you'd be already dead right after leaving the RUINS were it not for the promise between him and Toriel. After your first death in the Genocide Route, Sans will say how you look upset about something and then will go and say "Guess I'm pretty good at my job, huh?"

So I think if you look at it, Sans stands a pretty damn good chance of beating Omega Flowey. Reason being is that it takes a whole 10 freaking minutes to beat Sans without taking a single hit (It's been done, look it up). You have to constantly attack Sans in order for his fight to progress, and if he can dodge multiple attacks in one turn, then he stands a large chance against Omega Flowey. The only real reason why Sans was beaten by the player, was because he was caught off guard at the time.

^Sans does NOT follow the rules of combat. That's why he can beat you with 1 hp and dealing 1 damage at a time...
