How does one reserve a cake to begin with? Is there some place where there are just a bunch of cakes sitting around and people call dibs on them?

some japanese sweet shops take reservations and then the cakes/candies/ etc are just made like a factory, and you pickup when you get there. overall its a lot more control over the business, since you don't have to wait for people to show up; you already know what you're making for the day.
