Fetishes generally don't tend to make sense and the specific "how"s and "why"s are often different for every individual.
It can be the simple power/femdom aspect, succubi and monstergirls in general having a plausible reason to rape you, the idea that your soul or consciousness fuels them or maybe just because some would rather die like this a bit early instead of getting a heart attack, cancer or worse.

I can't speak for others, since I don't care for snuff myself, but I imagine that there being worse ways to go out probably plays a role. Going out by having your soul sucked out during sex is probably infinitely more pleasant that say, being beheaded, drowning, burning alive, etc.
