That's just one coloring method. Kind of like how characters who really have black hair are printed or shown with blue hair. It's mostly to help the character stand out and started with original printing manga where the only shade of black was pitch. This is more or less the same thing. Several artists give her purple or purple-ish hair, rather than gray because it's less dull I guess.
