My best guess as to why this pairing exists is probably that they are complete opposites. From tayuya's aggressive angry personality and hinata's hestative quiet one to tayuya's bright red hair and hinata's dark blue hair they're opposites. Which makes for easy shipping for fanfiction writers and artists alike.

It's an alternate universe pairing.
Which is to say, a universe where Tayuya survives and eventually joins Konoha this could happen.
It makes for a nice setup, people could be prejudice towards her since she used to work for Orochimaru and Hinata does her best to defend her.
