The same thing happened with WW2 prisoners in concentration camps. Stress is one of the things that can cause it, but it's more reliably observed in cases of starvation. The pituitary gland (which produces hormones) recovers from insufficient diet much faster than the liver (which absorbs hormones) - so a starving body will produce hormones it doesn't need, and at a much higher rate than normal.
