Seras still had blues eyes when she was a vampire. They were only red when she went all out in a fight.

about the eyes debate:
in the original hellsing manga, they were obviously grey like everything else, but they noticeably changed not just when she became a vampire, but specifically during blood rages (and then when she ascended)
the first anime (the 13 episode one) went with red all the time once vampiric.
Hellsing ultimate went with what was more faithful to the manga, which was blue normally, but red when in rage or after ascension
