I'm having a hard time not believing that the new designs are simply just that. New designs.
It makes the most sense that way since the characters look so alike anyway.

But, what;s important is, even if for some reason they're not, Pokémon Special will adapt them as such ala Crystal/Kotone.

Why would the trainers who just beat the champion and stopped Team Plasma need to pick new starters and go on a journey all over again?

They're most likely completely different characters, not redesigns. If they were, they probably would have kept some sort of aspect of the original designs so they're immediately recognizable. Or, you know, just told us that it was the same characters.
