The thing about this moment is the fact that Shinichi gouges out parasyte's heart. It's exactly the way Migi killed the first parasyte they met, the moment Shinichi understood lack of remorse in Migi.
It's a critical point for Shinichi when his humanity falling appart and he become more of a monster than he want to be.
