If fat Beerus and fem Whis are alternate versions from one of the other universes, could that imply that GT's timeline exists in one of those universes too? If they work like alternate dimensions, it's possible that GT could be declared canon.

The Time Patrol from DBO and Xenoverse are both canon.
So in a sense, although they're different dimensions entirely, GT is canon.

GT might have been shit BUT the fight with Super C-17 where they punched each other to the other side of the world multiple times and the ending (with sabitsuita machine gun de ita) showing dragon ball and dragon ball z was amazing.

No he doesn't look good either way. I like how Tien and Yamcha used to be right there with Krillin and now they do literally nothing.
