I doubt we'll ever actually see any female Super Saiyans in the actual series. So it's nice when the fans do stuff like this.

Let's not rule out the possibility of one coming from Universe 6. The Saiyan race is still around over there, and Vegeta taught Cabba how to transform. If we ever see more of the Saiyans from Universe 6, there's probably plenty of opportunities for a female Super Saiyan to pop up.
