Because she is main girl and subaru loves her the moment she first met and saved him from those thugs. After that, everything he did in the anime was for his undying love for her, even rejecting rem's confession shows his "pride" of his love for emilia.

Emilia isn't bad. Though she certainly is a case of not being the best starting off, but getting better latter on.
