Because the producers of the anime reinforce said mental block and worry about the implications of the audience knowing that creatures that may rival human intelligence are being forced into tiny red-and-white spheres.
Oddly enough, Pokemon are arguably better at communication than humans. Even though we only hear them say fragments of their names, Pokemon of every species seem to be able to universally understand one another. Humans however... well, we just need to see some poorly translated games to know that our languages are far from perfect.
