The no additional S rule only applies to plural nouns, not names ending in S.

The second grammar nazi was right. "Weiss" isn't plural. If it was a plural proper noun name (say a last name, referring to a family instead of a single bitch-breaker) then you'd drop the tailing S.

Both an additional S and just an apostrophe are grammatically correct after a name ending in S, singular or plural. It's a personal preference thing and one of the few times in English when there isn't an objective right or wrong way to do it. Either spelling is acceptable, so all attempts at correction here are correct, but incorrect in issuing a correction in the first place.
