Her eyes have changed color at least once, they have magic and I very much doubt the artist will ever read some comment on a western booru.

Her eyes have always been brown.
Natsu on the other hand has been portrayed with green eyes in the anime, while brown in the manga.
Gajeel ( in the manga ) was first shown to have green eyes, then it changed to red.
