So why is there hair a different colour again? Is it like a multiverse thing? Is there a parallel time and place where Bulma’s hair still has a bit of green in it or it’s just purple similar to Trunks exactly like in some of the images of her released over the years?

There is no reason. Toriyama drew Future Trunks's hair blue and that was that. No one questioned him.

Toriyama himself colored it purple years ago, then he colored it blue in Super just like Bulma's. It's a random retcon for no valid reason and we just have to deal with a permanent discrepancy that shouldn't (and didn't have to) exist.
