I don't know Japanese and I'm a filthy casual when it comes to Ultraman but I think with my limited knowledge and with the visual clues I can make an educated guess what this chart is saying.
Eyes: Not sure, I guess the implication the lenses on their face mask/face plate is that because it's multi-fractal compound like a bugs eye they have wider field of depth, maybe can see things not visible to the human eye spectrum hence the different colored lenses and maybe give them magnified vision so as to not step on innocents or even telescopic view for seeing things far distances away.
Ears: Again not sure, maybe a microphone to hear but maybe speakers to allow them to speak out of their masks? Maybe both?
Joints: This I'm pretty sure I have. I think these are implanted via surgery to reinforce an Ultra's limbs to prevent them from being broken or dislocated while in combat with a monster or alien invader. I mean what else could they be for?
Arm Organs: Also pretty easy to deduce what these are for. Probably to channel energy attacks such as the Spacium Ray out of their hands or arms. Since the diagram feels the need to point both of them out I guess both are different but both are needed to fire a beam I.E. both limbs must be touching each other to charge up a shot like a negative and positive charged magnet, respectively.
Stomach: I'm guessing here, but where his stomach should be might be where he stores his inner light. The Ultra race were once like humans, but their artificial sun malfunctioned exposing them all to a new type of light. Over time they evolved to be beings made of light, at least partially. Light is technically physical with mass, just the particles are usally spread apart too far apart to really interact with much. I believe this organ stores their inner light, concentrated close enough to be a pool or reserve of extra energy like food or adrenaline.
Timer: Everyone and their grandma know this one. Many Ultras can choose to have a color timer on their chest that tells them how much time they have left to keep fighting on a planet that's atmosphere is too thick or heavily polluted to gain enough sunlight to stay active indefinitely. It can also clue them in on how much damage they take as simply being beaten to death before the time limit is up is a real threat.
The down side is because it's connected to a vital organs such as the heart to measure vitals, it is also a weak point. Attacking this will harm whatever organ the timer is attached too, thus some Ultras choose not to get it.
