Ehhh....not as realistic as you think.
This series is kind've a look at how immature youngsters express romantic interest...because they don't really know how to express how they feel.
While it IS exaggerated in scale in this series, you can probably remember girls teasing boys or boys teasing girls that they had an attraction to.
The exaggerated levels are there for comedic relief, so really...by proper scaling, and compared to what make protagonists of Anime past have gone through (Ranma, Keitaro), him up and leaving isn't all that realistic...especially considering he's seen not only her kind side, but seen that she treats other males with coldness that she doesn't show him.

In many ways, this is tame than what happens IRL, so toning it DOWN actually makes it more comic relief, not exaggeration.
