Because the Fate/Stay Night universe consists of more than just the anime, perhaps?

Yeah, in the anime they have little screen time together and their connection is only briefly hinted at, but in the game it's shown that Sakura is actually Rider's true master, and that Rider cares for Sakura a great deal (and would do just about anything to protect her).

There is only the visual novel, same as with Tsukihime.
