That's why he ate more and slept more than a normal human being would, he's working two souls at once, and since Al's body was trapped in the gate its unable to grow and therefore it stunted Ed's growth.
Ever since Al got his body back that effect is finally done with, they can grow and live normally like any other human. So if you think about it, if Al never got his body back, Ed would have lived for ages. That is as long as Al's soul was kept fastened and stabled with him.
